The berry season has begun

Simply fruity, fresh, and delicious

Are you a gourmet or a sweet tooth, or do you simply love the refreshing fruity taste of wild berries? Then, how about a dessert to make at home.

Remember those delicious berry desserts from your spa hotel in South Tyrol? Do you want to refreshen your memory and indulge in such a dessert creation at home? Our gourmet chefs have a delicious recipe for you: Ginger pannacotta with berries.

Ginger pannacotta:
Boil 250ml cream, 100ml milk, 1 tablespoon grated ginger, and 40g sugar in a saucepan. Add 2 sheets of soaked gelatine, a pinch of salt, and a pinch of grated lemon peel and simmer for about 15 minutes. Strain the mixture through a fine sieve, then fill into moulds, and refrigerate for at least 3 hours until the mixture sets.

Berry sauce:
Puree 100g berries of your choice with 50g sugar and strain with a sieve. Mix with 2 tablespoons of Grand Marnier, and half a teaspoon of lemon or lime zest. Keep to one side.

Dip the moulds briefly in hot water, turn the pannacotta over onto plates, and garnish with fresh berries. Drizzle the berry sauce over them. Garnish with chopped pumpkin seeds and mint, and simply enjoy.
