Fresh leavened dough, juicy pears, and aromatic chestnuts – discover our favourite recipe for delicious chestnut krapfen. 

At our spa hotel in Italy, relaxation and adventure in the beautiful nature are not the only things you can find besides the enjoyment of our spa offerings. Culinary delights are also a top priority at Belvita Leading Wellnesshotels Südtirol, especially in autumn, when the chestnuts are ripe for harvesting. Our favourite recipe for delicious chestnut krapfen:

  • 250g boiled chestnuts, 80ml milk and 50g icing sugar or honey, flavour with rum
  • Prepare a dough with 30g yeast, 100ml lukewarm milk and 1 tbsp. sugar, allow to rest for 15-20 minutes at a maximum temperature of 35°C
  • Add 500g flour, 100g pureed chestnuts, 50g melted butter, 50g sugar, 3 eggs, 1 packet vanilla sugar, grated orange and lemon peel, rum, and salt to taste. Knead the dough until it forms bubbles and allow to rest for 15-20 minutes
  • Dice 200g pears or apples, mix with 200g pureed chestnuts, flavour with sugar and rum
  • Roll out the dough thinly and cut out round discs (10cm in diameter), put the filling in the middle and seal the edges to make halfmoons, allow to rise for 15 minutes
  • Deep fry in hot oil for about 4 minutes, drain, sprinkle with icing sugar, and enjoy the taste
